What is Nightshade?
Nightshade Pops is a monthly pop-up extravaganza born from Jose & Nathan's love of food, drinks, & hospitality. We borrow a beautiful space, set a big table, and serve the menu of our dreams every third Wednesday.

Jose was born in Michoacán, MX, raised in Birmingham, AL. As a James Beard Finalist in Outstanding Beverage Service and co-founder of Adios Bar, Salud Taqueria & El Tigre, he's been in the business since the age of 14. If he's not running the bar, order this man a 50/50 gin martini. He deserves it.
Nathan McCoy

Chef / Co-Founder
While his path started in small local kitchens in Alabama, he ultimately trained in some of the best restaurants in the country, including under five different James Beard Award winning chefs and most recently as Sous Chef at the iconic Michelin starred Gramercy Tavern in New York City. No fancy degrees or culinary schools, but years of hard work in the industry making lots of mistakes alongside the good food. After all that, his favorite thing to eat is still a tomato sandwich on white bread.

Grace was born in Alabama but has lived all over. She has been on plenty of adventures, including recording an album, researching wild baboons, and moving to New York to learn how to be a surgeon. One of her all time favorite adventures, however, has been working with Nightshade.

Pastry Chef
Kyle is the pastry chef at Automatic Seafood and Oysters, and he creates our Nightshade Pops desserts. Each one is thoughtful and delicious, and we are so lucky to have him on our team.
